The harvest is done totally by hand during the month of September.
LThe careful selection of grapes is fundamental in offering such a unique and characteristic wine. The production of the wine is determined by the characteristics of the harvest, by the vinificataion techniques and selection of the most special barriques. The objective being to produce the very best wine possible.
The fermentation takes place in 10,000 Litre stainless steel tanks for 6 days at a controlled temperature of 25ºC. The average time of the maceration is for 10 days and the ageing is for 6 months in French and American Oak barrels used for the second and third time.
